Spinach Sweet Potato Patties


Spinach and Sweet Potato Patties: 

1 large sweet potato (about a pound)
1 TBS Green onions
1/4 cup of fresh baby Spinach
1 tsp Cilantro
1/4 tsp Cumin
1/2 tsp Sea Salt
1 Egg
1/4 cup fine cornmeal

Prick potato with fork. Microwave for 8 minutes. 

Let rest until cool. Cut open and scoop out interior into bowl. 

Mix together with cilantro, cumin, sea salt and egg. (I'm sure you could use egg whites as well if you wanted to. It's mainly a binder) 

Mix in the corn meal and ripped or chopped baby spinach. 

Heat a pan and spray with cooking spray. Take 1 to 2 tablespoon scoops, place on pan and flatten slightly with your hand. 

Cook until golden/dark brown on each side. Serve with garlic yogurt sauce. Delish!

Garlic Yogurt sauce: 

1/2 cup Greek yogurt 
2 cloves garlic finely minced or put through a microplane 
2 tsps dried cilantro or 1 TBS finely chopped fresh cilantro

21 Day Fix Philly Cheesesteak Pepper

So I started the 21 Day Fix two days ago and I have begun to create new recipies to make my life easier. My biggest challenge comes during lunchtime for work. This is one of the recipies I came up with.

It accounts for 1 Green container, 1 Red and 1 Blue.

21 Day Fix Philly Cheesesteak Pepper



1/3 Onion
1 pepper (any color will do)
Ground beef or steak 
3 slices of Provolone or cheese of your choice
Salt
Pepper
Garlic powder

Season your meat and brown in pan on medium high heat.
Remove meat and set aside.
Add chopped onions and sauté. 
Cover and lower the heat to a simmer.
Sweat onions until they are slightly transparent or cook them slowly, stirring occasionally until they caramelize.
Return meat to pan and sauté for 2 minutes to marry flavors.
Cut pepper in half and de-seed.
Cut away pepper ribs.
Place one slice of cheese inside the pepper.
Measure one red container of meat and onion mixture and place inside the pepper on top of the cheese. 
Top with final two pieces of cheese.
Bake in oven at 350 degrees until the cheese is well melted and the pepper slightly softened.
